Systems for monitoring microorganisms in the food chain: objectives, regulatory framework, and organization in France.

Monitoring microorganisms at various stages of the food chain is an important tool for ensuring food safety. The two main systems—official controls (including monitoring and inspection plans) implemented by public authorities, and self-monitoring carried out by food chain operators—are described as they are currently established in France. Future developments are then discussed, with the launch of the Food Observatory. (R.A.)
